Hong Kong Char Siu, Honey-Glazed

Our char siu uses well-marbled pork collar, marinated Hong Kong-style, honey-lacquered and roasted over high heat until the edges caramelise — then smoked over lychee wood, the same as our duck. Sweet first, savoury after, and finished with a fruitwood smoke you remember.
